Australian Salmon baked with Tomatoes, Onion and Pine Nuts.

How you store it
As soon as you catch it bleed it and store in a cool place ( on ice until you get home and then in the fridge untill it is ready to be cooked).
How you prep it
Scale it and gut it, keep the fish whole.
How you cook it
In a bowl dice up and mix together.
1/4 bunch of Parsley
3 Fresh Tomatoes
250 grams of pine nuts
2 dobs of butter (or 4 table spoons Olive Oil )
Salt & Pepper
Stuff the fish firmly with these ingrediences wrap tightly in aluminium foil and bake on 150 for 30min ( depending on the size of the fish.
How you serve it
On a plate with the tasty stuffing on one side and golden brown chips on the other (Salad optional).
