Snapper with ginger and tomato stuffing

How you store it

Store in fridge, covered with paper towel.

How you prep it

Have two small snapper fillets ready. At the thickest end slice through middle so yo have a nice pocket to put in stuffing. For stuffing -- make your own with 3 bread slices. two teaspoons of grated ginger, 1 garlic glove crushed, 1 onion chopped and 6 cherry tomatoes quarted. Mix altogether with a little olive oil and lemon juice. Place inside fish pockets. Wrap in foil.

How you cook it

Put on hot barbie wrapped in foil for about 15 minutes.

How you serve it

Unwrap from foil and if ant juices pour these over the plated fish. Serve with fresh salad of your choice.

How it makes your fish As Good As GOLD

The end result tastes almost as good as gold-- a cold gold that is.
