Poor Man's Crayfish (very good)
Fish Name (Sand Flathead)

How you store it

All fish when caught is best kept in a slurry of salt water and ice, the salt improves the life of the ice and keeps the fish at a cooler temperature than just ice alone.

How you prep it

Simply clean the fish and remove the head.

How you cook it

By keeping some of the salt water from where the fish was caught it is just a matter of placing the fish in a shallow frypan or wok and covering with the saltwater. Bring this to boil and then reduce heat and simmer for approximatly 15 min no seasoning neccessary, once cooked remove from remaining salt water and let rest for approx 2 min.

How you serve it

This is an easy meal or snack wich can be chilled or eaten warm, all you need do is carefully remove the flesh from the frame of the fish discarding the bones and the skin, then you are left with the white flesh. My personal favorite is to serve it with a fresh garden salad and a dressing of, olive oil, garlic, vinagar, lemonjuice and chopped fresh dill. Alternatly served on crusty bread or crackers.

Flathead are a very common fish around our waters and a recipe as simple as this is just what a fisho needs to keep him going. Simple and tasty.
