Crab and chicken pizza
Fish Name (Blue Swimmer Crab)

How you store it

Always chuck your crabs into an esky as soon as you catch them. This stops them from fighting, or losing their legs and claws.

How you prep it

To prepare the crab, boil some sea water. Once boiling vigorously, chuck in a couple crabs at a time (depending how big your pot is). Once the water returns to the boil, cook a blue swimmers for 3-4 minutes, and give a large mudcrab 10 minutes.

How you cook it

This is a recipe to use if you have a few crabs left over the next day. Peel the crabs to get a nice bowl of meat. Prepare your pizza base. I have a bread maker machine, which makes a perfect pizza dough. Just follow the bread recipe, and add a dash of olive oil to help crisp the crust. Mix half tomato sauce and half mayonnaise to use as your pizza sauce. This is also an easy Island dressing. Now the fun bit! Sprinkle on some crab meat, and I also like to add a bit of roast chicken. Now you can go for your life with your favourite pizza toppings. I suggest olives, sun dried tomtoes (not too many cos they are strong) and a bit of red onion. Try not to overlaod the pizza or you will not experience the crab flavour. Use pizza cheese only (mozzarella with a bit of parmesan) and a few of your favourite herbs (lemon pepper seasoning for me)

How you serve it

After cooking in the oven (even better I have a pizza oven) let the pizza cool a bit before you slice it up. Always wash your pizza down with a nice cold beer.

How it makes your fish As Good As GOLD

This is great way to use up any left overs you may have. Sometimes after a big day on the water, you don't get around to eating them all while fresh. So this ensures none of your crabs go to waste.
